Join Sydney chef and food consultant Alex Herbert at Northside Produce Market (NPM) for ‘Garlic Galore’. Alex is peeling back the secrets of garlic with some of NSW’s best garlic farmers - NPM stallholders. As Alex questions the speakers on tales of vampires, crops and finds out a few home truths, she’s also going to tempt your imagination and taste buds whilst cooking a delicious garlic dish!
Learn about ‘Garlic Bombs’, the seeds/bulbils from the garlic flower head. This newly utilised part of the garlic is full of garlic flavour,pretty, packs a punch and is a hit ingredient with top chefs, including Alex Herbert from Bird Cow Fish Restaurant. Previously these seeds were only used to produce blended garlic, and as that process takes two years, most growers prefer using cloves to propagate from, which produces a perfect clone of the original bulb and takes much less time to harvest.
At the event, Paddy the Baker will be using Matty’s Healthy Pizza Bases to create great ‘pizza bombs’ or pizza using the garlic bombs supplied by Morganics farm. Don’t miss out in tasting this delicious treat.
The garlic growers include:
• Ken and Libby Morgan from Morganics Farm, who moved from Greenwich on the Lower North Shore of Sydney, to a beautiful pine filled farm situated near Orange in Mount Canobolas to start their garlic farm.
• Gilles Bonin and Victoria Clutterbuck of Gilles Bonin Australian Garlic, who have 20 years experience growing garlic, using only the best organic methods. Gilles is going to demonstrate how to plait garlic so you can show off your plaiting skills in your kitchen
• Phil Lavers from Moonacres Farm, situated in the Southern Highlands also farms organically and grows Elephant/Russian garlic. Used by many but also slightly controversial as it is not a ‘true’ garlic as it is from a different family called Alliaceae with its origins coming from leeks.
