Course Overview
Discover the art of marmalade-making in this hands-on workshop!
Whether you’re a beginner or a passionate home cook, this class will guide you through the traditional process of creating delicious, homemade marmalade.
Under the guidance of an experienced tutors, you’ll learn how to make classic Orange Marmalade as well as a zesty Grapefruit & Orange Marmalade, using time-honored techniques to achieve the perfect balance of sweetness and tang.
Throughout the session, you’ll gain insights into:
- Selecting and preparing citrus for the best flavour
- The secrets to achieving a perfect set and glossy texture
- Tips for sterilising and sealing jars to preserve your marmalade
At the end of the workshop, you’ll take home your own jars of freshly made marmalade, ready to enjoy or gift to friends and family.

About your Tutors
Yvette and Lisa, who share a passion for baking and preserving, met and became friends through the CWA. Together, they have developed new and innovative workshops that aim to ignite your interest in keeping these traditional skills alive.
Our culinary classes are kept to a small group size, ensuring every participant receives personalised attention and a more engaging learning experience.

Lisa Maude
I originally trained as a Home Economist working in corporate kitchens, appliance companies, magazines, in Australia and overseas, then as a film and remote location caterer for 15 years.
I have also been interested in food history, security, sustainability and food rescue. Marrying all my interests together I developed a passion, or obsession, with preserving.
I have tutored in the bygone skill of jams and preserves since 2018. I regularly create and share historical recipes on my Instagram account @spoonfedagain

Yvette Henderson
Growing up in an Italian household, my family life was all about traditional cooking and making meals from scratch and being together.
My Mamma was an excellent cook and I paid very close attention. I am a keen home cook and regularly bake for fun as well as bake cakes to order.
In addition to teaching adult cooking classes at North Sydney Community Centre, I feel very strongly that children and teens learn the basic skills and knowledge to be able to make nourishing food as well as fun food for themselves and their families and gaining that important kitchen confidence to take them into adult life.
